Pumpkin Chip Muffins



This recipe might not sound that good with the combination of pumpkin and chocolate chips, but it is our absolute favorite muffin recipe. These muffins are very moist and so yummy. I like to eat these cold because I love cold chocolate... I'm weird like that.

Pumpkin Chip Muffins

4 eggs
2 c. sugar
1-16oz. can pumpkin
1 ½ c. vegetable oil(or ¾ c. oil and ¾ c. buttermilk (I like this best))
3 c. all-purpose flour
2 tsp. baking soda
2 tsp. baking powder
1 tsp. ground cinnamon
½ tsp. salt
2 c.(12oz.) chocolate chips

In a large mixing bowl, beat eggs, sugar, pumpkin and oil until smooth. Combine flour, baking soda, baking powder, cinnamon and salt; add to pumpkin mixture and mix well. Fold in chocolate chips. Fill greased or paper-lined muffin cups ¾ ths full. Bake at 400 deg. F for 16-20 min. or until muffins test done. Cool in pan 10 min. before removing to a wire rack.
