Chocolate Raisin Clusters
These clusters are so tasty and good for you. After all, it's got dark chocolate and raisins! These are addictive, so be careful. They taste really good and sweeter when they're frozen. I suppose you could also try it with milk or white chocolate, but I haven't tried that yet. Dark chocolate is the only way to go for me!
Chocolate Raisin Clusters
For the simple syrup:
1/2 cup sugar
1/4 cup water
8 oz. dark chocolate chips (or semisweet if you prefer)
3 tbs. simple syrup
2 cups raisins
1 tbs. water
1) For the simple syrup: In a saucepan bring the sugar and water to a boil, stirring, and boil until sugar is completely dissolved.
2) Cool syrup.
3) For the clusters: Combine chocolate and simple syrup in a heat-proof bowl. Microwave for 1 minute 15 seconds, remove from the microwave and stir to smooth consistency. Add raisins and 1 tbs. water to the bowl and mix to completely cover all raisins. Using a spoon or small ice-cream scoop, scoop out raisins into clusters onto a waxed paper lined baking sheet. Once all clusters are formed, cover them with a sheet of waxed paper and plastic wrap (I found this step unnecessary), place in refrigerator and chill until firm. (I like these best frozen!)
